First introduced in 2024, Klatch Coffee’s springtime blend Songbird has returned for the third time. Past iterations were released as two-component and four-component blends, respectively, but this year, this seasonal blend consists of three components — a Panama Catuai Natural, a Mexico Washed, and an El Salvador Anaerobic Orange Bourbon.
The resulting blend is one that’s vibrant and refreshing, with notes of red fruit and florals, and a smooth, structured finish. Highlighted flavor notes for the blend are Fuji Apples, Green Grapes, and Apricots.
Why did you choose these three components?
“We wanted to capture the feeling of a fresh spring morning with something bright, fruit-forward, and layered with delicate florals, yet still grounded with a satisfying, full body,” Klatch Coffee’s Quality Control technician, Ricky Espinoza began. “The Mexico Washed created a great foundation, bringing a smooth body and subtle red fruit notes. From there, we incorporated the Panama lot to elevate and intensify those red fruits, adding a lively and juicy dimension. We finished the blend off with the Orange Bourbon, which added soft floral aromatics and a gentle citrus nuance. The Orange Bourbon really rounded out the cup to its balanced, seasonal elegance.”
Why does the label look different from your other coffees?
For our seasonal coffees, since they only have a limited run, we wanted to create a unique and different look. With that in mind, we’ve opted to create special labels that are more art-forward, while also containing the same important information you need when looking at a coffee label! Roast level, flavor notes, a small descriptor, and the coffee name are still present, but the label is also introduced with artwork designed by our in-house team. “The first time we released Songbird, the label had one bird on it. Then, in the second year, it had two birds. That was the main component I wanted to make sure was included,” shared Brand Manager, Natasha Lozano.
Megan Elenburg, also part of the graphics and design team, took the helm to bring Natasha’s vision to life. “The original title of Songbird came from Mike Perry, Klatch Coffee’s founder, Roastmaster, and green sourcer, as he got inspiration from the birds he would encounter around the coffee farms he visited,” she began. “This year’s label builds on that concept while maintaining key elements from previous years. I arranged the returning blue birds in a way that would make whoever is holding the bag of coffee feel like they are floating alongside them. By having a bird in the foreground, middle ground, and background at varying sizes, it gives the illusion of depth,” she said of her design. “To further push the composition, I made the title red to represent the color of a ripe coffee cherry, again tying it back to the bag’s main purpose—coffee.”
How is Songbird best enjoyed?
We love it when our coffees are multi-purpose! Songbird can be best enjoyed as a pourover, a cold brew, or even as espresso.
For a pourover, we recommend the following:
- 1:14.5 ratio
- 24.5g coffee ground medium coarsely
- 360g water at 204°F
- 3:30 total brew time
- a more detailed brewer such as an April Brewer or a Kalita Brewer
Recipe:
- Start with a 60g pour to bloom your coffee.
- Wait 30 seconds before your next pour.
- Continue to pour in 60g increments every 20 seconds or so - don’t overfill your filter, but don’t let the grounds completely dry before your next pour, either!
- Once you’ve poured all 360g of water, wait for the grounds to dry and the water to finish dripping into your carafe.
- Enjoy!
For cold brew, we recommend the following:
A one part coffee, five parts water ratio. Grind your coffee as coarsely as possible, and steep in cold water for 12-24 hours. The longer you steep, the stronger the coffee will be. If possible, use a toddy filter for your grinds. If not, strain them out once your cold brew is done brewing with a cheese cloth, or even a Chemex or pourover filter!
For espresso, we recommend starting with the following dial recipe:
- In: 22g of beans
- Out: 35g of espresso
- Extraction Time: 22 seconds
- Temperature (if your espresso machine allows adjustments): 201°F
