Here at Klatch Coffee, we believe coffee is never finished. Our CEO, Heather, and Director of Retail, Holly, are always trying to create new drinks or revamp old ones to create something even better. We’re coffee people here, of course, but we can also appreciate a good tea, matcha, or tea latte.

The mornings this past month have been gray—not in a way that’s only dark and gloomy, but with a tint of light pink and softness. There’s been a gentle glow to the still air, as if something beautiful was just on the precipice. On those mornings, a nice warm drink and a book with worn pages were the perfect pairing to settle into the day. As we followed this new daily routine, a certain emotion started to surface: yearning.

We were yearning for our sunshine to come back, we were yearning for the sweet romance and care described within the pages of our novels, and we were yearning for a deliciously warm beverage that had just a bit of an edge to it. Hot chocolates were great, but they lacked the caffeine to carry throughout the day. Teas were beautiful, but it missed that rounded body that a beverage with milk held. Then, we settled on a London Fog. Balanced, smooth, and softly sweet, it was almost perfect. We were missing just a bit more depth to the beverage to round it out, so we had a thought. What if we could turn that slightly sweet, slightly citrusy tea latte into an actual latte? With those thoughts, we created the Pemberley Fog.

What is the Pemberley Fog?

The Pemberley Fog is our coffee take on a London Fog—a double shot of our House Espresso, a hint of our house-made Pemberley syrup, which consists of Vanilla and Bergamot, and your dairy of choice (though we recommend Whole Milk). It is an 8oz cappuccino, and the result is a beverage that is subtly sweet, subtly bright, smooth, and elegant—just like Mr. Darcy.

Upon the first sip of the Pemberley Fog, you’re first introduced to the light sweetness that the Vanilla brings. The aromatics shine through, as the Bergamot lingers on the tongue with a slight tartness that balances perfectly with the Vanilla, and creates a floral, bright, warm scent that seeps through the air. Our espresso ties it all together with a bow, introducing more depth to the flavor profile. The cappuccino format allows the microfoam to put the final touches on the masterpiece, with the microfoam creating a smooth and creamy texture to blend everything together.

Why the House Espresso specifically?

Our House Espresso is the perfect partner for this waltz. It has some brighter flavor notes of orange citrus, a slight bitterness and subtle sweetness towards the middle, reminiscent of semi-sweet chocolate, and it finishes with a slight tinge of spice, like cinnamon. It’s complex, it has layers, and it complements the citrus of the bergamot and the sweet warmth of the vanilla flawlessly.

What does “Pemberley” mean?

For those who may not know, Pemberley is the estate owned by Mr. Darcy in Jane Austen’s famed classic, Pride and Prejudice. The sleek and elegant estate is seen as a representation of Mr. Darcy’s character, class, and generosity, and serves as a symbol of his personality. In the novel and consequent films, he is portrayed as someone who is beautiful, yet kind and undaunting. Most importantly, a tour of the estate is what changes the protagonist, Elizabeth Bennet’s, perception of Mr. Darcy. It allowed her to see that there’s more to him than just what’s on the surface; it allowed her to see his sophistication and grace.

How did you find inspiration from Pride and Prejudice?

With the fogginess we’ve been experiencing during our early mornings this March, all we could think of was one scene from the 2005 Pride and Prejudice film. As that scene continued to live in the forefront of our minds, we knew we had to share it with others in the best way we knew how—with a new drink. Pride and Prejudice was the perfect book for us to capture those feelings of yearning for a slow burn romance. Then, it became the perfect film to put on for background noise as we worked during the day. The romance that slowly formed between Elizabeth and Mr. Darcy was one that was unforgettable—it was flawed, but it was magnificent. We couldn’t gift everyone who yearned for the feeling of seeing Mr. Darcy walk through the fog their own novel-inspiring love story, so instead, we created the Pemberley Fog in hopes it’d bring the same warmth that finding your own Mr. Darcy would.

Who would enjoy this drink most?

The Pemberley Fog is a coffee drink after all, so it won’t be for everyone. But, for those who are latte lovers that are searching for something new, or for those who love London Fogs but are open to trying coffee, we’re confident this could become your new favorite drink. For the cozy cafe goers looking for a couch to curl up on and read from, this is the ideal drink to sip in our glass dine-in cups. For the BookTok girls who prefer to read from the comfort of their own home, the drink can be taken to-go to enjoy from your favorite space instead.
