Each month, Klatch Coffee highlights a select few coffees on our pour over bar, known as the Bru Bar. This pour over menu features three distinct coffees within our standalone locations, and two distinct coffees for our locations within Sprouts Farmers Markets across Southern California. For the month of June, we’ll be highlighting some returning classic coffees and seasonal specials.
Empire
Not only will we be using the Empire blend as our featured espresso in store locations for June, it will also be the first Bru Bar option for all store locations. The Empire blend is one of the newest additions to the Klatch Coffee family, having been released in 2023 in celebration of our 30-year anniversary. The blend comes in a sleek black bag with a gold foil rendition of a coffee roasting machine, paying homage to Klatch Coffee’s roots. With our company being forged in the Inland Empire, we were inspired to create a blend that was bold, strong, and complex—just like we are.
Our first standalone roastery was built on a street called Onyx Boulevard, and as we expanded, we eventually outgrew the space. Our second and current roastery is located right down the street from the original, on a street called Feron Boulevard. With Onyx being a quartz gemstone with a deep black color, and "feron" translating to "ironmonger" in French, the black bag was ideal for us to represent the metalwork aspect of our story from Onyx to Feron as well.
The coffee itself is made up of four different components - a natural coffee from Brazil, a washed coffee from Colombia, a natural coffee from Ethiopia, and a washed coffee from Guatemala. This blend of coffees was designed to create a balanced and layered cup with sweetness, body, clarity, and complexity. The Brazilian component provides a rich, chocolatey foundation, while the Colombian adds balance, sweetness, and intentional acidity. The Ethiopian contributes bright fruit notes and florals, while the Guatemalan brings it all together with depth and a clean finish. Combining natural and washed coffees also helps balance texture and fruit intensity, crafting a coffee that is approachable and consistent, but still vibrant and interesting.
Though we serve our Bru Bar coffees only as a pour over, the Empire also tastes great as espresso, and as a cold brew.
Espresso Recipe:
- Dose: 20 g (double)
- Temperature: 201°F [94°C]
- Time: 24 seconds
- Out: 36 g
Toddy Cold Brew Systems Recipe:
7 cups of water | 12oz of freshly ground coffee - coarse
- Weigh out 12 oz of whole bean coffee.
- Grind coffee coarse.
- Insert the stopper to the outside of the Toddy brewer container.
- Dampen the filter and insert into the inside bottom of the container.
- Add 1 cup of water and 6 oz of coffee grounds.
- Slowly pour 3 more cups of water over coffee grounds, in a circular motion.
- Then add the remaining 6 oz of coffee grounds.
- Wait 5 minutes - Slowly add the remaining 3 cups of water, ensuring all the grounds are saturated. DO NOT STIR (It can result in clogged filter).
- Steep for 24 hours to create a smooth and rich flavor.
- Remove the stopper and let your coffee concentrate flow into glass decanter.
- Cold Brew concentrate stays fresh in your refrigerator for 2 weeks.
Organic Honduras Manos de Mujer Fair Trade
Back with a new crop, our Organic Honduras Manos de Mujer Fair Trade will be featured in our standalone stores. Called “Manos de Mujer” (“Hands of Women”), this washed coffee is produced entirely by women farmers and women workers from 15 farms in the Marcala region of Honduras. The project is led by COMSA, an organization focused on organic farming, sustainability, education, and community wellbeing through its “Finca Humana” philosophy. The organization has taken a humanitarian stance on producing and ensuring their workers are well supported, emphasizing harmony between people and nature. The coffee is carefully processed using hand-sorted cherries, controlled fermentation, and slow solar drying to ensure high quality and consistency, while also supporting women’s leadership and community development in coffee production.
This coffee comes from COMSA, who is part of the Fair Trade USA organization. For each pound of green coffee we buy that’s Fair Trade certified, an additional $0.20 USD goes towards a Community Development Fund. Fair Trade producers are then able to use that community fund towards an objective of their choosing! In 2025, we contributed almost $1,000 USD alone to COMSA. With their Community Development Fund, COMSA is working with the UN to establish the Target Gender Equity Initiative. This program aims to support and enforce gender equity policies, run a Women’s Committee, and provide leadership and management training for both women and men. The overall goal is to increase women’s representation and leadership within the organization, especially at higher management levels.
Each 12oz pour over of the Organic Honduras Manos de Mujer Fair Trade that we serve from our Bru Bar menu contributes roughly $1.22 USD to COMSA's Community Development Fund!
Klatch Aged Whiskey Reserve
The returning Klatch Aged Whiskey Reserve will also be available on our Bru Bar menu in both our standalone stores and our stores within Sprouts Farmers Markets. Sourced by Klatch Coffee's own Founder and Roastmaster, Mike Perry, the Aged Whiskey Reserve is a combination of Yellow Catuai and Red Catuai coffee beans hand-picked straight from three top farms in the famed Cerrado Mineiro region of Brazil. With their natural processing method, low acidity, subtle sweetness, and mild body, these Brazilian beans were the ideal choice for infusing. The beans rested in our seasoned whiskey-soaked oak wooden barrels for at least sixty days, absorbing the character and complexity of the whiskey within. The result is a luxurious cup bursting with notes of smoked wood, sweet honey, and warm spice, with a silky smooth finish and a caramelized depth that lingers on the palate even after you’ve finished. But don’t worry—high roasting temperatures mean this coffee can be enjoyed without worry of any alcohol content.
Just in time for gifting on Father’s Day, our Aged Whiskey Reserve is delivered in a unique glass jar that’s ready to wrap and give to dad. Not only is the glass jar great for repurposing for storage, it also echoes the rich tradition of aged whiskey.
This unique coffee will also be highlighted as a cold brew for our Sláinte Coffee Curious offering for June!
